Hash brown potato recipe.

Chop up the amount of cold potatoes desired rather fine; season with salt and pepper, and after that add ½ cupful of cream.

Into a hot frying-pan put 1 table-spoonful of butter; when it is heated without burning, put in the potatoes, packing down evenly, stand over a hot fire for five minutes, after that draw one side to moderate iieat, and cover so that the potatoes can become thoroughly heated and steamed throughout, the bottom browning. When done, fold over as for an omelet; serve your hash brown potatoes on hot platter garnished with parsley.
