Chicken and Jelly
This recipe is called "Chicken Dressed as Terrapin". Select a young chicken, clean and cut it into pieces; put it into a stew pan with just sufficient water to cook it. When tender stir into it half of a cup of butter and one beaten egg. Season it with salt and pepper, a tea-spoon of powdered thyme; add two hard boiled eggs coarsely minced and a small glass of wine. Boil once and serve with jelly. |
