Lyonnaise Potatoes
Recipe for Lyonnaise potatoes.
Cold boiled potatoes; chopped onion; butter; chopped parsley;
drippings or lard; seasoning.
Cut the potatoes in dice. Put 2 tablespoon-fuls of butter and
one of drippings or lard, for each quart of potatoes used, in a
frying-pan and melt over the stove. As soon as the butter is melted, add 1 table-spoonful
of chopped onion for each quart of potato, and fry only until it
turns yellow. After that add the potato, and season. Stir constantly with
a fork so as not to break the potato. After five minutes add the
chopped parsley, and cook two minutes longer. Warm the dish prior to
serving your Lyonnaise potatoes. |
