Oven Baked Potato Recipe
Recipe for twice baked potato.
Select fine, smooth potatoes of the same size, and bake them; once they are
tender take out from the oven, slice in halves or slice off the top lengthwise;
scoop out the inside of the potato, mash it fine; season with table-spoonful
of butter, 4 table-spoons of cream, salt and pepper to taste;
beat until very light, after that put back in the jackets. If slice in halves,
fill the 2 halves level full and press them together. If the opening
has been made on the side, fill the cavity rounding full, brush
over with yolk of an egg, and put in the oven until a nice brown.
