Boiled Leg of Mutton
Boiled mutton recipe.
To prepare a leg of mutton to be boiled, wash it clean, cut a small
piece off the shank bone, and trim the knuckle. Put it into a crockpot
with water sufficient to cover it, and boil gently from two to three
hours, skimming well. Then take it from the flame, and keeping the
pot well covered, allow it to finish by staying in the steam for ten
or fifteen minutes cooking time. Serve it with a sauce boat of melted butter,
in which a teacup of capers or nasturtiums have been stirred in.
If you want to use the broth for soup, put in a bit of salt while
boiling; if not, salt it well when partly cooked , and boil the mutton meat
in a cloth. |
