Fresh Oyster Recipes

In order for success with oyster recipes you should buy fresh oysters which have some fat on them. Oysters are in season from September to May. Small oysters, such as are sold by the quart, are good for pies, fritters, or stews; the larger oysters are nice for frying or pickling for family use.
