Boiled Chicken Recipe
Clean, wash and stuff your chicken, as if for roast chicken. Baste a floured cloth around each and put into a pot with sufficient boiling water to cover them well. The hot water cooks the chicken skin at once and hinders the escape of the juice. The broth will not be so rich as if the chicken is put on in cold water, but this is a proof that the chicken meat will be more healthy and better tasting. Stew your boiled chicken very slowly, for the first half hour of the cooking time especially. It should be boiled an hour or more, guiding yourself by size and toughness. Serve your boiled chicken recipe with egg, bread or oyster sauce.
